Huckleberries Ever since we saw the first ripe huckleberry a week ago my kids have been begging to have this cake for breakfast, so we did. Scrambled eggs and moose sausage on the side we made a proper brunch but the best part was the cake…fullsizeoutput_2504.jpeg…and perhaps this bed-headed berry thief that hung along during mixing. *busted*

fullsizeoutput_24f9This recipe mixes up quick, the cake is moist from buttermilk, sweet and savory with a buttery crumble topping and the tart bites bursting with wild berry flavor make it a perfect high summer treat to bake in cool misty mornings before the heat of the day sets in. As a bonus I feel it is even better the day after baking – if any of it lasts that long.


Huckleberry Blues Coffee Cake (makes 9 large slices)

You’ll need:

for the crumble topping

  • 1/4 softened salted butter
  • 1/4 cup brown sugar
  • 1/4 cup wheat flour
  • 1/4 cup hemp hearts
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoon cardamom

for the cake

  • 2 cups all purpose unbleached flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 large egg
  • 2/3 cup granulated sugar
  • 1/4 cup softened salted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 3 cups fresh wild huckleberries or blueberries*

To make:

Preheat oven to 375 degrees Fahrenheit. Prepare a 9 inch square baking pan by greasing the sides and bottom then lightly coating with flour, set aside.

Create crumble topping in a medium bowl by creaming together the butter and brown sugar. Add in flour, hemp hearts and spices; using your fingertips work ingredients together and break up to form a sticky sand like mixture, set aside.

Combine dry cake ingredients of flour, baking powder, salt, cinnamon, and nutmeg by gently whisking in a medium sized bowl, set aside.

In the bowl of a stand mixer fitted with a paddle attachment cream together butter and sugar for the cake until smooth. Blend in egg and vanilla on medium-low speed then add in 1/3 of the flour mixture, mixing until fully incorporated. Add half of the buttermilk to moisten followed by an additional 1/3 of the flour mixture, scrape sides of bowl as needed with a rubber spatula. Finally blend in remaining buttermilk until fully incorporated and finish with the final 1/3 of the flour blend. Remove bowl from stand mixer and using a rubber spatula turn the batter to ensure it is even consistency.

The batter will be quite stiff. Using a rubber spatula carefully turn in berries until evenly distributed then turn batter out into prepared cake pan and smooth to an even thickness.

Evenly spread crumble mixture atop cake.

Bake 40-50 minutes until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for at least 10 minutes prior to serving. Using a knife or thin spatula loosen cake from pan walls, slice into 9 even pieces and serve warm if desired.


*If you do not have fresh berries on hand and wish to use frozen DO NOT THAW berries prior to adding to batter. Simply toss frozen berries to lightly coat in 1 & 1/2 teaspoons of additional flour prior to combining into batter and bake for approximately 5 additional minutes.
