Alaskan Rhubarb Kale Smoothie Bowls (makes two very generous smoothie bowls, about 3 cups)

You will need to begin by making up the rhubarb compote the day or several hours prior to smoothie making in order to allow compote to fully chill.

To make compote, cut several rhubarb stalks into inch long chunks and place in adequately sized saucepan. Over medium heat cook rhubarb so that the stalks release their juices and breakdown, stirring often throughout cooking. There is no need to add additional liquid as the rhubarb will leech enough to cook in it’s own juices. Once all rhubarb is pliable and easily mixed into a thick sauce, it is done. To finish you can opt to puree until smooth with an immersion blender or simply allow the blender to smooth compote during smoothie making. Scoop compote into a bowl and cover tightly, place in fridge until completely chilled. Another option is to freeze pureed compote in ice cube trays for easy portioning and preserving. 

You’ll need:

  • 3 packed cups Alaska Grown Kale my preferred varieties are Siberian Kale or Tuscan Kale, stalks removed
  • 3/4 cup rhubarb compote, chilled or frozen into ice cubes
  • 1 cup wild Alaskan blueberries
  • 1/2 cup wild Alaskan raspberries
  • 6 oz organic apple juice
  • 1 Tablespoon raw honey (more can be added to adjust to desired sweetness, I dig a tart smoothie) 
  • Granola & additional berries for serving

To make:

Add all ingredients into a large capacity blender and using the smoothie setting puree contents until smooth. Use a rubber spatula to scrap blender sides if needed between blending to allow for even mixing.

Serve in wide shallow bowls with a heaping scoop of granola and garnish with fresh berries.

For added tang and probiotics, swap apple juice with your favorite Kombucha or consider adding a scoop or two of plain Greek yogurt to the blend.
